Growing up, we had a small smoker that my dad and I would break out a couple times a year and make a 5lb batch. During lockdown, I got back into it while staying with my parents for a few weeks. My friends love it and can’t get enough, so now it’s an official side business.
It’s high quality shit. Fresh, never-frozen wild salmon from New Zealand, California or Alaska. Brine is made from all organic ingredients. Smoked with natural alder wood chips.
The flavor is unlike anything else produced in Southern California. It’s the perfect level of dryness, oiliness, saltiness and sweetness. It melts in your mouth and is perfect whether you’re serving brunch or charcuterie.
